Twice as nice.
We all have them, the Christmas left overs, and as our
shopping bills seem to get more expensive, we want to make use of every last
scrap.
So here are a few ideas for things to do with them.
Most of them do not have exact measurements, they are
to taste or ratios you would prefer
Cheeseboard fondue
Whisk 1 glass white wine and 2tsp cornflour together in
a shallow pan, bring to the boil whisking all the time, then add 200g grated or
crumbled cheese. Stir until cheese has melted, then dunk in roasties, pigs in blankets,
sprouts, ham or turkey in the fondue.
Easy Turkey Salad
Shred or chop leftover white turkey meat, then toss
with shredded cabbage, grated carrot finely sliced onions, and chopped coriander,
dress with lime juice fish sauce and chopped chillies then scatter with nuts
Christmas cottage pie.
Shred left over turkey meat with any left-over ham and
or pigs in blankets, add a splash of cream or crème fraiche, stir well and tip
into a baking dish. Scrunch any leftover potatoes, veg and stuffing, together
with your hands and scatter over the top, top with a little grated cheese, then
bake in the oven at 200c/180c fan/Gas6 for 30mins until golden
Bread Sauce fritters
Spread left over bread sauce, over a small tray, leave
to cool and solidify, cut into squares then cost in bread crumbs, deep fry
until golden brown,
Turkey Caesar.
Cut any left-over stale bread into cubes and toast in a
low oven until crispy, then toss with left over shredded turkey meat, Cos
lettuce leaves and your favourite Caesar salad dressing
French Onion gravy soup.
Sizzle sliced onions or shallots in butter until golden,
then pour over any left over gravy and thin with a little stock, bring to boil
make large croutons from stale bread, sprinkled with a grated cheese and bake
scatter croutons over soup to serve.
Flavour boosters.
Add these to your store cupboard to refresh left overs
Chipotle paste – stir into chillies,
fajitas or cheese quesadillas, mix with mayo for a spicy spread for could meats
Fresh Coriander – Perk up curries, add to
coleslaws salads or noodle-based dishes for an extra depth.
Coconut Milk - Another great addition to
curries, particularly veggie ones, or add to soups.
Mayonnaise – A must for leftover ham
or turkey sandwiches, Also an easy way to dress slaws, made with left over veggies,
Try spreading on the outside of a toastie before grilling for extra crispy
crust.
